    question about jalapeno smoked sausage

    How many jalapenos would you use to make 25 pounds of Jalapeno smoked sausage. Also, How do you prepare the jalapenos? thanks , Woody

    I was told you could just use jarred jalapeno's. Not sure how much to add.

      I use fresh jalapenos at 1 to 5 for flavor and 1 to 3 pounds for someone wanting it warmer. I cut them up in a chopper first, add to meat, and then grind. This seems to help mix them throughout the meat best.

        Dryed are hotter than fresh. about 2.5 ozs of dryed for 25lbs of meat

          I use 3 cups of (drained) diced japs per 25lbs. I only use Mt. Olive brand. I do not grind I just add them to the meat before stuffing.
