    Chili Powder

    I see a lot of people using chili powder in recipes. Nothing wrong with that, but every since I found this receipt for making your own, I haven't bought the premixed stuff again. Give it a try and let me know what you think.

    2 tablespoons paprika
    2 teaspoons oregano
    1 1/2 teaspoons cumin
    1 1/2 teaspoons garlic powder
    3/4 teaspoon onion powder
    1/2 teaspoon cayenne pepper, or to taste

    Just put in the bowl and mix together. The fresher the spices the better.

    I just like how you can customize the powder to meet your needs. Ill mix up a really hot batch, with a little Tony's added in for the lease and the tamer batch for the house.

      is this for links how much will this do?

        It just replaces chili powder in any recipe.

        Ive used it in links, with other seasonings and additions. Like add this to some black pepper and red pepper flakes. If you like Cumin, give it a try. As far as how much to use, that's up to you. I experiment a bunch.

          One Ive made that is kind of similar to this chili Powder is Deer Chorizo

          2 lbs coarse ground Venison
          3 lb coarse ground pork butt
          1-cup cold beer
          8-tsp paprika
          4-tsp salt
          5-tsp fresh minced garlic
          4-tsp cayenne
          2-tsp cumin
          2-tsp dried oregano
          1-tsp freshly ground black pepper

          Combine all, mix well & stuff into hog casing

          That may give you and idea of how much to use.

              are you talking about making regular chili powder or "chili" seasoning as in "bowl of red"?

                3 ancho chiles, stemmed, seeded and sliced
                3 cascabel chiles, stemmed, seeded and sliced
                3 dried arbol chiles, stemmed, seeded and sliced
                2 tablespoons whole cumin seeds
                2 tablespoons garlic powder
                1 tablespoon dried oregano
                1 teaspoon smoked paprika

                This is the one I use. You can use any dried chilis if you cant find these. I heat the chilis to release the oil then grind it all in a coffee mill.

                  Call me a traditionalist, but those are spice mixes or rubs, chili powder is just that, ground chilis.
