Fast and Easy San Antonio Salsa
Needed:
1-32 oz can of whole tomatoes
1-8 oz can tomatoe sauce
2-4 jalapeno peppers (seeded optional)
1/2 white onion chopped course
3 cloves garlic
Fist full of fresh Cilantro tops and leaves
tsp of Comino
1/4 lime optional, with rind (I like the rind. It adds a little zing in this salsa and is excellent with Margaritas)
1 Habanero pepper, optional
In a blender place in this order: Garlic (bottom), Lime optional ( squeeze juice first then add remains), Peppers (no need to chop), Onion, Cilantro. Open can of whole tomatoes and pour juice into blender but not the tomatoes (save for next step). Add the 8 oz can of tomato sauce and chop on low speed till Cilantro is consumed into mix. Add Comino and whole tomatoes. Chop just enough to leave tomatoes chunky in salsa. Pour off into large bowl and chill in refrigerator. Serve with large bag of favorite chips!
For a variation try roasting the peppers first. Or adding various Banana peppers, Annaheims, and/or all three varieties of bell peppers with the Jalapenos. This is also great on burgers, hotdogs, Ceviche, enchiladas, tacos, ect.
