If y'all like burnt ends but don't want to sacrifice the point of your brisket to make them, I highly recommend you give these a try.
I used ten lbs of pork belly, skin removed
2 cups of bbq sauce
Pork rub
About 4-5 Tbs of Honey
1 stick of Butter
Cubed the belly into 1 1/2 - 2 inch squares, rubbed them in my favorite pork rub and threw them on the smoker w some pecan wood @ 250 till they got a good bark on them, around 3 hrs. After that put I them in a foil pan w/ the butter, honey and bbq sauce, wrapped in foil and put back on the smoker for another 2 hrs, or until internal temp hits 200-205. Then took the foil off and let the sauce tack up for another 30 min.
The result was amazing. They are sticky sweet, smokey, and the silky smooth rendered fat melts in your mouth, literally you might chew once or twice per piece, y'all gotta try em.
