    Pork chop brine

    Got my thick cut chops back from the processor. What is a good brine for chops. Going to put them on the smoker tonight or tomorrow.

          I like smoked sea salt and water. You could get fancy with rosemary and juniper berries, etc. Delicious, but I think the rosemary tends to dominate a bit much.

            If I brine pork it is usually for a couple of days, but that is for a larger amount of meat (typically entire hog). I use oranges, onions, garlic, jalapenos and salt/seasonings. For a smaller feed, I would go with something like the men mentioned above. Get creative, but watch the amount of seasonings on a smaller piece of meat. Good luck.

              Salt and sugar work, use it on all pork chops. Check good eats at food network.
