        I've found the best source for the pork bellies is Brookshire Bros., they can order them with the rind removed. Allow 1-2 weeks for ordering.

            I will, they need to cure 7-10 days. Will cold smoke for about 4 hours.

                We started a smaller batch a little over a week ago, got it hanging in my little smokehouse overnight and will smoke first thing in the morning. Here's a before pic:

                          Reminds me that I need to get busy making another batch. Finished off the last package from my most recent 50# batch.

                          FYI...if you have a Costco nearby they keep pork belly in stock and most recently was priced at $2.79/#.
