    Canning Salsa

    I have all the fresh veggies and herbs I need to make salsa, however I don't have a good recipe for canning. From what I've read you can just use lime or lemon juice in place of vinegar to prevent botulism, so does anyone have a recipe for canned salsa? I usually just use tomatoes, jalapenos, garlic, cilantro, onions, salt, and pepper.

        Add lime and a table spoon of sugar to your recipe and you've got a winner.

                            12 tomatoes
                            2 Tomatillos
                            1 red Bell Pepper
                            3 jalapenos
                            1 Serrano
                            1 Head of garlic
                            1 Bunch of green onions
                            2 Onions
                            2 Ears corn (only used one - had to eat the other one )
                            Juice of two limes

                            roast everything but the limes on the grill, puree about a 1/3 and chop the rest.
                            mix it all in a serving bowl with the juice of the limes and salt to taste.
