Smoke it slow and it takes alot of salt. (bout all i know)

ck out my post here, i used it for goat meat too, but as stated above i would rub it with a layer of salt the day pryor and wrap it and keep it cold for a day before then cooking it.

We have always quartered it and smoked it on the pit. When its done just pull off hunks and wrap in tortillas.

i ate one these mexicans cooked in the pit wrapped in peeled agave leaves,it tasted like it was smoked,,,**** good
