Deer processing here- Yay or Nay?

The options look awesome. Thinking about dropping off a fat doe this weekend and having the whole thing turned into boudin, tamales, chorizo, and summer sausage.

I agree with this. Good, but didn't live up to the expectations. If I was local I would use them but I wont make the road trip from south of Houston again.

What's great is I actually used it before posting...

Lots of people only commenting "Bellville Meat Market" without posting which flavors or cuts are good. Or people saying they bought meat or seasoning from there but never used them for processing. Keyword search also picked up "meat" and "market".

Not so efficient and effective hence why I posted about the processing...

Interesting. Folks were trashing them a year or 2 ago. May have been deleted by staff but I figured that would have been a nice hint for ya.

I'm not much help on that one. I don't normally take too many animals to the processor. You cant go wrong with Prasek's down hwy 59. That's not exactly Houston but they are great IMO.

I’ve tried them all and wasn’t happy with any of them

Novak’s, Belleville meat market, Vinceks, Jr’s, Praceks

The only place I go is Colorado River Bend Processing, it’s amazing

I took a deer and a half to them last year (6 quarters) and it was $750 for 1/3 chorizo, 1/3 hamburger, and 1/3 smoked sausage. Yes $750!

The sausage wasn't great...I did chipotle, jalapeno, cheese and rice. They only put a tiny amount of each and you could only taste the chiptole.

Their chorizo was good but i recommend getting 60% pork (default is 50%).

Looking forward to Prasek's, this will be my first year using the new one on I-10. Usually use Dozier's (which I love) but trying something new this year.

Place is really good. Also they keep orders separate. Meat you take in is the meat you get back.

I won't go back to Bellville because it was SUPER expensive ($500+ for nothing extravagant) and the sausage is not the style that I prefer (Czech or even German style). I don't know about everyone else's stuff, but mine barely had any seasoning to it and was very dry.

I'm almost positive you get your animal back, I'll give them that, but I've decided to do my own since that experience.

I used to use them exclusively. Until their prices shot out the roof. Now I do my own...but you do get your own meat back, and it’s consistent. I’m just not paying for it anymore. Last bill was almost $1500. Granted it was a LOT of sausage and multiple animals (deer and axis) but it kicked me over to doing my own. I’m trying to convince my father-in-law that he needs a walk in cooler so that I can supply all the sausage he needs for his groups that he has coming every few weeks now to the farm for meetings. All of that being said...I wouldn’t drive 100 miles like some folks do to use them and pay the higher prices. But that’s just me

IMO if you hunt, and kill deer every year it’s worth it to learn how to process your own.

IMO, If you're an established meat market that needs to a advertise on Radio, you're not that great.

I have tried them in the past and really do not like their sausage, especially the Chipolte. Their taste and texture isn't that good, especially for the price and hype. I do have friends that like em, so tastebuds are indiscriminant

Took ours to the processor for the first time in a long time. We used Arnold’s in Hempstead

We did all the stuff below and it’s all great
Garlic, sweet chipotle, jalapeño and cheese sausage
Summer sausage, regular and jalapeño cheese
Boudin
Tamales

Used Bellville for many years. They just priced me out. Use to pick up my stuff and it was anywhere from $400-$650. When I first started it would be like $250-$300. I know prices go up, but I went to Prasek’s this year and my bill was only $187. Quality is still great. Arnold’s in Hempstead is awesome too. They have killer tamales and paperback boudin.

I like it.
I take some there for sausage. Tried of the boudan and tamales this year. Boudan, probably won't get it again. Tamales are good.
I like the sweet Chipotle and jalapeno cheese sausage.
I like that they are pretty quick, you get your deer back, not someone else's deer.

Down side $$$.
I normally grind my own hamburger, so I take my cubed up stew meat into them to have sausage made out of. Otherwise they'll charge $50+ for deboning.

I had their summer sausage years ago and it was good. I was there last weekend and tried some more if there sausage and it was ok at best. Extremely expensive also.

I took a nilgai cow a few weeks back. Had straps/ tenders steamed. 1 back ham into steaks. The rest hamburger..
125 dollars. All vacuum sealed/ labeled.
Worth every penny.

I've also taken nilgai bull, oryx, axis in the past. I've always been happy with it.

I have been using them for 10 plus years yea a little pricey but I truly like what they do and very polite. Get what you pay for and I like it.
