Im sure there are a million ways to prepare a good sweet potato dish. But I made one last night that was killer...
You need about 6 big sweet potatoes (3 to 4 cups worth). Rinse and clean (leave skin on). Cover with water and simmer/boil for about 35 min or until fork tender. Remove from water, peel and set aside.
Crust
1 to 1 and half cups of chopped Pecans
1/3 stick of unsalted butter (Melted)
1/3 cup of Flower
1 Cup of Brown Sugar
** Mix crust mixture together in separate bowl and set aside***
Potato Mixture
Use a big mixing bowl and a wire mixer (Stand mixer worked great) and combine
3 cups mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs -- well beaten
1 stick butter -- ( 1/2 cup) melted
Put mixture in 8x8 buttered Pyrex dish....Cover potato mixture with the Crust mixture.
Place in a pre-heated 350 degree oven for 35 min...
Take out and let stand for 30 min prior to serving...Goes great with Steak..
