Herbert's crawfish sausage

Picked up some Boudin and crawfish sausage from Heberts yesterday as I wanted to cook up something different for my bday today. The Boudin I got control of. Never cooked crawfish sausage though. Anyone got recommendations?

Thanks that does sound good but I was planning on serving it up for dinner whole link. Not sure if low and slow on smoke or direct heat on grill or what sauce migh be good with it. Or maybe I should roll it up in a butterflied chicken breast or pork tenderloin. Just looking not to ruin it.

Never had crawfish sausage so I can't help. But now you got my curiosity up may have to find some and try it.

Good stuff. Came out great. Cooked up Boudin balls, stuffed mushrooms and saved half a link for a bacon wrapped crawfish sausage chicken roulade. Smoked with hickory.

Herbert's has some awesome spicy crawfish boudin as well. Love me some Herbert's!
