Did the same last weekend (not a spike).

Doesn't get much more fresh than that!

Nicely done. What type of vacuum sealer do you use?

I use a foodsaver that we got as a wedding gift 7 years ago, but its on its last leg. Probably upgrade to a Weston before too long. I love processing my own deer, but I wish it didn't take so long. It'll be nice when my kids are old enough to help.

I just got a meat grinder and the packaging contraption for the ground meat. A vacuum sealer is next on my list.

I will be fully processing my own deer this year.

GOOD DEAL! I am able to increase my yield by 10-15% doing it myself vs processor. Especially since I keep the shanks and joints for making soup.

Are you a midget or something??? Who the heck goes through all that trouble for 3 little pieces of meat on the plate??? Geesh- I'm putting a freaking whole backstrap on my plate when I'm eating!

                            Looks great though.
