Wow she has been eating good!

I shot one with a ton of fat on her a couple of weeks ago. It actually got hard to clean her because my hands and knives got so slick from all of the fat I was dealing with. I cut almost all of the fat off because I have always heard that wild pig fat tastes bad. I cooked a few little pieces of meat and fat up just to see and the fat was very mild in flavor and tasted good...I wish I had saved the rest of the fat for sausage instead of throwing it away!

If I touch a pigs legs like that on my lease I get poison ivy 100% of the time! I have finally learned to use rubber gloves while loading them in the truck and every time I touch them after that and have quit getting poison ivy every time I clean one!
