    I use a dehydrater to make my jerky, i always seem to over cook it and it is really dry and crispy, how do i know when it is not overcooked?

    Slice the meat a tad thicker.

      I had same problem and learned not to go by the 1/8" cut 12-15 hr dry time. I slice a little thicker and constantly check meat. Just finished a batch and turned out well.

        Take it out and bend it every now and then. If the meat bends, it's not done. If the muscle fibers start to tear or break apart when you bend it, then it's done. If they just snap, then you cooked it too long.

        Don't follow a recipe necessarily, especially for cook time. Just go til it's done and then quit.
