    Pan seared flounder with porcini sauce

    My fiance and I went gigging Saturday night and found a few fish including a nice 21"er. I wanted to keep it simple and let the fish stand out on its own so i pan seared it with a little olive oil and salt. Served it over a bed of roasted red peppers and onions topped with a porcini sauce.

    Porcini Sauce:

    -Take dried porcini mushrooms and soak them in 2cups of warm water for 20min. (Discard mushrooms)
    -Take reserved liquid and add little bit of salt to it.
    -make a reaux by stirring flour and oil together. once you have the color your looking for add the mushroom liquid as you need it until desired thickness. I added a little fresh garlic at the end but it really didn't need it. The flavor was awesome!

    Nice fish right there. I have always been partial to lump crab served with flounder. They compliment each other real well.

        Yea i could have caught about dozen crabs when we were gigging but i didnt want to mess with em. They do go good together though
