Ive had some that taste like apple pie but this recipe turned out more like liquored up apple cider.

What twist can you put in it to get that apple pie flavor?

It's drinkable for sure . Won't be wasted!!!!

I see nothing wrong with adding less everclear... Make it to your liking. I have found out already it's too sweet to sip on much. It's a between beer swig around the fire.

I made 2 gallons last night. Only added 1& 1/3 bottles of ever clear. Still had a bit to it but was dang good.

How are y'all getting it clear? Mine is always cloudy as heck, from the cider, and looks kinda like ditch water.
It still tastes good and drinks fine, but it looks bad.

Filter it maybe?

Unless all your liquids are clear, it won't be clear... IMO

Yeah. I've made bout a dozen batches and they've all been murky.


Unless you find clear cider I doubt it'll be clear.

I made some similar to this around Christmas but a bigger batch. Basically the same but double the everclear. It called for a gallon of apple juice and gallon of cider and 3 cups of sugar. Used only a cup and 1/2 and it was great! Only cider I could find was a little dark and so the finished product was not as clear and appealing as a clearer cider makes it. Awesome with some vanillia added. Consume with caution

Your vision tends to get "cloudy" after a few pulls from the jar. Judge the color prior to taste test!

I use clove in with the cinnamon sticks with half gallon cider and half gallon, plus a gallon of homemade apple wine (12-15%abv.). 1 cup sugar and 2 cups brown sugar, dissolved. Then I bring it all to a quick boil and immediately pour it into a 5 gallon drink cooler. Add one crushed campden tablet and give it a quick stir, then cover for one to two hours, depending one how long you're going to age it in the jars. (Don't worry about losing alcohol in the wine, since it's covered it is actually working like a reflux still column.) Then I add a quart of sweet feed sour mash triple distilled uncut likker and stir. Let sit for 30 minutes. Then transfer to quart jars each containing one full apple, sliced. Let sit for at least two weeks, but the longer the better.

You can use the pectin method, drop pectin into it and it works like a parachute, bringing down all the sediments. Then, siphon into a clean (oxyclean) glass container for inspection and hopefully immediate bottling. Oxyclean your bottles/jars and rinse well prior to bottling, too. If you use fruit then you'll have to add it to the jars instead of boiling them, just add a campden tablet to the boil.

I made a batch this weekend and Holy smokes it's good! Buddy and I drank 3 of the 9 pints that it made. Paid for it Sunday morning when it was time to wake up for church, but with 6 more pints of this stuff sitting in my fridge I can't wait for the weekend!

My FIL just brought me a quart of "Apple Pie" from the great state of WV. There is no everclear in it if you know what I mean. Might have to give this a try though!

Made some this past weekend and it tastes great, was very surprised at the lack of harshness after using everclear. Sure is strong, got me buzzin pretty good after about 12oz of it!

OK... So I took some cheap brandy that I had bought for cooking. Bottom shelf, far right kind of stuff.Cheap.. Poured it over frozen sweetened strawberry's and let it sit a few days in a quart mason jar. Then poured the liquid into another jar. Keeping the berries in the jar and poured a cup of sugar over them. I let it sit a day or so then poured the juices off into the first jar and repeated the process a second time. After the second time. of juices into the Brandy jar I tested it over ice.. Wow.. it was dang good. And the berries.. Wow.. they were awesome..by themselves. I am going to go back and try this again..
I am sure I could get some strawberry flavored brandy but this was fun. Kind of like reloading for my guns. I could buy it but man its fun making it...

I made a batch over the W/E and this stuff tastes great !
I don't know if it's my tolerance level or because I've had the store bought shine, but I think it should be stronger
I'm gonna get another bottle of Everclear and "fix up" a couple of the quarts !
Other than being weak, it tastes pretty good.
