2 ways to cook it the classic method from California is "Santa Maria" style direct over the coals at at least 8", like a thick steak to 130°~135° the other way is to cook it indirect with smoke to about 115° then reverse sear it to 130°~135° the one in the pic is indirect - reverse seared |
