HEB Tri-Tip SCORE
HEB had tri-tips for $4.79#
they've been $5.77# for the last couple of years
and their all Beef links were $1 a piece

2 ways to cook it
the classic method from California is "Santa Maria" style
direct over the coals at at least 8", like a thick steak
to 130~135
the other way is to cook it indirect with smoke to about 115
then reverse sear it to 130~135

the one in the pic is indirect - reverse seared
