What to do when you have a crawfish boil and whole chickens that you don't want to have to grill. After our crawfish were cooked I heated up the boil again and dropped the chickens in whole. After about 15 minutes of a rolling boil I turned off the heat and them let the chickens sit in the boil for about and hour.
After the chickens cooled I shredded the birds and then added one can of Rotel diced tomatoes and one 16oz container of sour cream. I mixed all 3 ingredients together and served the chicken on corn tortillas with lettuce and diced tomatoes and drizzled some tomatillo sauce.
Turn out great.
