Russian Olive Hedge makes a heck of a barrier and at a glance is resistant to drought and disease. Can be pruned or allowed to get big and bushy. Makes a fine "wall."

What ever you do don’t use bamboo, that crap spreads like fire and is nearly impossible to get rid of

Monterry oak trees. Just planted 8 of them for same reason.

Texas Lilac. Could be bush or tree. Pampas grass. Pretty together.

Oleander if you don't want the animals to graze on it all the way to the earth.

Deer will eat red tips until there is nothing left.

I used Golden Bamboo and was very happy with it. Get the clumping variety and it does not spread, bur instead gets a ring wider each year. We have removed entire clumps with no problem.

                      Hey,
First of all, clarify me one thing, Are you looking for vines that will cover up a transparent fence or a tree that will provide 20+ feet of coverage?

I thought Oleander was poisonous? If I had critters I didn't want dead I would avoid that

Not sure what a good answer to OP's question but I would stick with something that was evergreen/foliated year round

Bamboo. My parents have used it on serval properties.

Hedge row on left is bamboo hedge row on right is an uncut fence for 12 years. The only way I can get through the bamboo is a path that has been made to walk the fence line. The bamboo is impassable.

                            It is poisonous.
That's why goats know better to not eat it.

We planted bottlebrushes and in less than a year they have over doubled in size. Our neighbor did the same and in 3 years they are about 9' tall and 4-5' wide.

                                Ligustrums would work.

As noted: oleanders are poisonous; bamboo will spread out of control and requires an excavator to remove.
