Who still has backstrap in the freezer? If your stash is all gone, steal some from a friend. I loved everything about this meal.

Marinated butterflied backstrap stuffed with fresh pico de gallo and queso fresco and baked. It was everything I hoped it'd be.

You could probably try grilling it, too, but you might want to wrap it in foil first to keep the juices from escaping.
