Will a whole rib eye cook up and shred like a pork butt?

I have 1/2 of a beef loin (the other half was cut into 1” steaks). I was thinking about smokin the other half like a pork butt and makin tacos or sammiches. Whatcha think?

A better idea would be make you some killer chicken fried steak fingers to dip in country gravy, we also make a second dip out of Velveeta cheese
