    Canadian Goose recipe needed

    Looking for good recipes for geese?! I shot a bunch last weekend but haven't ever cooked any. How about goose sausage?!

    smoke on wood plank, at bout 225 for 10 min. Throw goose away and eat plank

      I cube them and brown in cast iron with my own version of "taco seasoning"

      2 T chili powder
      1T cumin
      1T garlic powder
      Salt and pepper


      Sear meat hot and fast then add a cup of water and seasoning. Simmer for 3-4 min

        My bourbon glazed would be good too.

        Biggest issue with geese is over cooking due to size of fillet. Thin it out to duck sized and soak in salt water brine 3-4+ days to draw out blood

                Sausage would be a good way to use them. I would recommend doing pastrami with the breast and confit the legs. Maybe even grind the breast and use the meat for chili relleno?..

                  We have done goose chorizo and summer sausage, both with added pork fat, and they are phenomenal

                      Just got back form a long weekend of goose hunting in Oklahoma and asked all the guides the same question. Only two answers were goose jerky (tried it and its not bad) and goose fajita's. still need to try to the fajitas.
