I have made these a few time and they are always a big hit with the family. The key to making a good link that gives you that snap is to get fresh sheep casing. Luckily for anyone who lives in the Houston area you can get fresh casing from a specialty food market called Phonecia. And if you don't live around the Houston area you can order it from butcherpacker or allied kenco. Although most of time when ordering from those places it will be packed in salt and not fresh.
