        1. Tear corn tortillas into pieces and put into hot pan with about a tablespoon or two of veg oil and stir fry for about 3-5 minutes
        2. Add onion and browned ground sausage or chorizo.
        3. Add beaten eggs. Just enough to cover tortillas and meat
        4. Cook just as you would scrambled eggs adding salt and pepper to taste
        5. Plate mixture and drizzle your favorite salsa over the top

                              there are migas and chilaquiles I love them both some places have pico in the corn chips and eggs with cheese then others just do fried corn tortillas and eggs , I make them at home both ways but as mentioned above I fry my chips in the deep fryer for extra crispy tortilla chips, sometimes I will add salsa to the mix to make them a bit cruncy but saucy as well try them and see which one y'all prefer
