Brisket Meat still Good????

Smoked a brisket yesterday, foil wrapped sat in the cooler for about 3 hrs. Took it out of the cooler about 9pm and it was still hot and foil wrapped. Both wife and I had fell asleep and forgot to put in the fridge!!!. Woke up this morning about 6:30 and it was still on the counter. Brisket still edible???

Beef doesn't go bad that easily if it's been well cooked. If it wasn't raw in the center I also wouldn't hesitate to eat it. Just make sure you heat it up good before eating it. ***Disclaimer*** I'm sure this isn't what the health department would tell you.

Absolutely. If it was still hot when you out it in there the it should have been sterile. Being wrapped allows little chance for reintroduction of bacteria. Even if it was sitting on counter unwrapped it would be fine, but wrapped helps even more. Cooked food doesnt go bad near as fast as "they" tell us it does.

On top of the fact that it was smoked ( smoking and salting was "invented" for the sole purpose of preserving food ) and probably had a salty crust. Both salt.and smoking do a very good job of preventing bacterial growth.

The smoke is a great preservative.

Chop it up real fine add BBQ sauce and have breakfast tacos or chopped beef sandwich.
