    Got a pig for the pit Saturday

    Went to do a deer count and was told to bring a gun in case pigs show up. Wasn’t expecting much other than to have a few cold ones while counting deer.
    Had 2 does and 3 fawns eating and all of a sudden they look up and haul azz. Figured maybe cows were coming, so I didn’t get too excited. Then here they come. 6 pigs all around the same size. Set the beer down and grabbed the .308. Tried to line a few up when I shot, but only she fell. I bet he’ll find at least another dead one tomorrow.
    156 lb sow. Didn’t stink, so I cleaned it and she’ll go on the pit this weekend.

                That hog will eat good! One thing you can do that even makes 'em better eatin' is to strip the hide before skinning, then pull the hide off in strips kind'a like peeling a banana... If you do that, the fat will stay on the meat and especially if you're doing the meat on the pit, it will stay even juicer and more tender... Hang either way, but I hang by the head and use a razorblade knife with a carpet blade and cut the hide in about 2-3" wide strips from under the ear to the back of the hams, then peel each section down a little at a time so the meat stays clean... When you get done, it will look like this.
