Maybe everyone down here is making this, the HEB was all out of velvetta brand, almost out if their brand, only a package or two of regular ranch mix, only low fat evaporated milk and low on the tomatoes.
This queso recipe is extremely creamy, cheesy, hearty and WONDERFUL. I get requests for it from friends and family every time there is a get-together. There is a 'secret' ingredient in it that I think makes a yummy difference.
speaking of cheese. Anybody know how to make a good "white" queso? What kind of cheese is best?
On " white" queso I use philidelphia cream cheese with rote land jimmy dean sausage. I have made it every Super Bowl since I was in high school. I love the stuff!!
I substituted cream of mushroom, eased up on the full packet of ranch, and added an extra can of diced tomatoes, and put the big thing of velveta in. Was very happy with the recipe.
Try the spicy Ranch mix for a little extra kick. I have made it 3 times and changed it a lil Everytime and it is still delicious! Made some stuffed poblano peppers the other night and covered with this queso and was a hit! Thank you for posting this up.
1 small evaporated milk
1 can cream of chicken soup
1 pkg ranch mix
1 can Rotel
1 can green chilies
1/2 can jalapeƱos of desired
Velveeta (small)
Cilantro
1/2 tsp. cumin
Mix soup and milk. Add everything else then melt cheese in it. Add cilantro last
sounds great....missing meat.
add 1lb jimmy dean hot breakfast sausage (or Deer pan sausage).
