    Smoked Wild Turkey Breast

    Had a wild turkey breast from this year and decided to smoke it. First filleted it almost in half and pounded it out into one big piece. Then seasoned with Ragin Blaze and cumin. Then spread garlic cream cheese and crumbled some boudin on top. Folded it over and Wrapped with bacon. Then more blaze and on to the Smoker. Oh had the tender loin and stick of boudin left so they went on also. The kido wanted me to smoke the turkey legs and thighs so they got injected with creole butter and blazed also.             I tried your recipe this weekend except I added Feta and Poblano pepper slices inside the stuffing and I used some smoked venison sausage in lieu of the boudan. It was fantastic and got raving reviews from everyone - thanks for posting!

                  Did this last night with a breast from last spring. Awesome. Now I gotta wait 2 months to get a couple more turkeys to make it again

                          Terrible and tough if I remember right. This is the only way I have found to make wild turkey legs taste good.
