Stinky billiegoat is an acquired taste

Ya, I've had it before. And if it has to be prepared a certain way to make it edible......

If you ask a lot of people it is their favorite game meat. I made some chili the other day and it was really good

Pronghorn is good eats. A little rich, but good flavor.

Use some elk meat, if you have some.

One I picked up from Cajun Blake. Instead of tomato sauce use Zing Zang Bloody Mary mix.

as long as the antelope doesn't have a strong "sage" taste, go ahead and use it

Only secret I have for a cookoff is to blend all ingredients besides meat. Around here they like a smoothe texture for some odd reason. I prefer big chunks of veggies, but that will lose every time around here.

Put about 3/4 seasonings and spices in at beginning. Add the rest last 20-30 minutes. Expecially if you want it hot. The longer you cook peppers the milder they become. So put them in towards the last.

Also don't get to far away from chilli Too many people get too wired and it turns into a 2 gallon pot of uneatable $&@%. Examples I've seen:dill seed, Hershey bar,Carmel, rosemary

For the love of all things sacred, please don't ruin it with some dang frijoles.

I like that idea. My first batch I cooked was the “lazy man recipe.”
And it won our company contest.

Guess that says something about me?
