We made smoky beef and sausage enchiladas at the ranch today. They turned out awesome.
1/2 lb of ground beef and 1/2 lb of sausage. Browned in an iron skillet. Mix in onion and bell pepper and season with HillBilly Mojo Red.
lay out tortillas. I used flour for mine. Lay American cheese on each tortilla, scoop in beef/sausage/pepprr/onion mix in each one.
add enchilada sauce and shredded cheddar.
roll them up. Add more sauce, chopped red onions, black olives and smother with cheese.
Put in smoking pit at 400 for 25-30 minutes.
Beans go well on the side.
