The wife was trying to figure out what to make for dinner with ingredients that she had on hand and not having to go to the store....here is what she came up with.
She thawed out 2 pounds of axis steak and cut it into strips (across grain). In a bowl she mixed these spices...
1 tablespoon mild paprika
1 1/2 teaspoons salt
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon chili powder, add more if you like heat
3/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon brown sugar
1 teaspoon cayenne pepper, add more if you like heat
1/4 teaspoon cracked black pepper to taste
In a cast iron skillet she warmed up some olive oil and after coating the strips of meat in the spices, she cooked them in the cast iron skillet until medium rare.
In another cast iron skillet she kind of "roasted" a bag of frozen corn..
Tortillas, Monterey jack cheese, your choice of salsa, sour cream, cilantro and frijoles......pretty fang tasty and quick to make
