    Anyone have any chili secrets?

    I am doing a chili cook off tonight. I just found out about it. Lol

    Gonna make pronghorn antelope chili. Anyone have and special secrets to make cook off chili

          After i brown the meat i kind of brown the tomato paste in the grease mixing it together before i put it in the chili

                  Do things in pairs!

                  Use ground and cubed meat, two varieties of peppers, if you use onion only put half in for the whole cook time, add the other half just prior to serving. Having the complementing pairs changes up the texture/flavor of the chili and is generally well received!

                  Also use beans, but only if you use two different kinds

                      This is what I do.. the peppers i use are jalapenos and pablanos...chop 3 jalapenos saute 2 of them with onions and garlic 3rd goes in when I bring the liquid to a boil. The pablanos go into the boil whole (2 or 3 of them) and say until chili is done.
