Looks similar to hog head cheese that we grew up eating. I'd try it!

I grew up in D'Hanis and have eaten my fare share! Love me some parisa. The Country Mart in D'Hanis, Alvarez's in Hondo, and Dzuik's in Castroville all make a good batch.

Great stuff! La Coste meat market is my favorite...

I've never heard of it, here is what I found on it when I searched.
I have some friends that live just south of me in Medina County where the Texas Hill Country meets the Texas Grassland, in an area known as...

I've been known to try most foods at least once so maybe one day I'll try this...

Ten four. I do believe that Dziuks and that whole Medina county area is where it originated and most of it is made.

Kind of like Panas. I'm not sure but the only place I've seen Panas sold is in Comfort. Love me some Panas for breakfast.

Might have to try it out. Almost like beef ceviche. Anyone every try with venison?

I eat the heck out of it, just had some for lunch yesterday. My wife works in Hondo and picks it up for me as a treat. I always pick up 2 lbs on the way to Amistad as well.
