Looking for jerky recipes-just gettin started

Done a bunch of hogs on my pit over the years. You can get away with 160 to 165 internal temp. Inject liberally with turkey injection. Cook at 250 deg.

An idea ya might try

To put the amount of heat in the food that ya want....bring a small jar of chiplotle powder in the place and add the amount of heat that ya want.

Brining works much better than marinade

Brining pork and chicken makes meat much juicer and penetrates all the way through.

Try these folks, top shelf product and not a long soak time.

I use their products in bbq comps.

YOUTUBE has a lot of stuff you can do with a KAMADO style cooker.

Go to Lowes and get the Charbroil infrared.

No fat flare ups and better juicier meat and veggies.

Been using them for 5 yrs now,always get complements on my steaks and chicken and fish.;)b

MUY IMPORTANTE!

Get a good digital meat therm.

Push it down to the breast bone and pull it back out slightly....

When it is 160, Pull it and let it sit for at least 45 min.

Then carve it...

Took it out of the igloo at 6:30 and it was still warm. 105 deg.
The bark had a nice brown color not black as in my other briskets.

I do age my skeet at least 6 months in my garage to keep it out of the rain.
