Killer fajita recipe
This is my families favorite meal. Serve it up with some guac. and salsa and you will be a hero.

1lb. of flank steak
8 cloves of Garlic (minimum, I use a lot.)
2 Tbsp of Worcesterhire sauce
1 Tbsp red wine vinegar
1 Tbsp of Kosher salt.
1 Tbsp red chili powder
Juice of 1 lime (minimum)
2 tsp of fresh ground pepper
1Tbsp of ground cumin (minimum, I use a lot)
2 tsp of onion powder
Cilantro, chopped. To taste, I use at least ½ -3/4 of a bunch.
¼ cup of of olive oil
3 tsp of red chili sauce
2-4 minced Chipolte peppers. Usually stores carry this pepper canned in an Adobo sauce. This pepper is not hot but is somewhat spicy.
FRESH tortillas

Trim off excess fat and tenderize meat with a spiked meat hammer.
Mix ingredients together and marinate steak overnight.

Cook on a hot fire, preferably with mesquite or hickory.
Let steak rest for 5-7 minutes after taking off the grill.
Cut 90 degrees to the grain of the steak.

frazee3200 05-30-2011 04:15 AM

BuckySWT 05-30-2011 08:09 PM

...on chicken.

Put it all in the food processor and pulsed it a few times to combine it all real good. Marinated the chicken @ 4 hrs and it blew my mind.

Oh...and sopapillas for dessert :)

I use shriracha

Used an improvised version of this on chicken in the disc cooker.

Used it with venison and hog fajitas this past weekend.

Didn't have shriracha, so I used some "Mother Pluckers" hot sauce. Turned out excellent...made ya sweat...but I like em that way.

armadillophil 07-10-2013 10:28 PM

I imagine it could have been 1st, had it been marinated overnight. It was a last minute decision pending a "Pre-Marinated rule". First time, "Fajita Entry" for us.;)b

I cooked some fajitas in the disc this weekend. gonna have to try this marinade next time.

T-Bone 09-23-2013 09:59 AM

Marked for future reference, it sounds good

Agsfight 09-24-2013 06:01 PM

Crippler, try beating (with flat side of the hammer, not spiked) chicken breast to about 3/4" thick, then marinate. It will cook quicker and will be more like chicken fajitas.

TexasLongball 09-24-2013 09:02 PM

Tagging this for later

Catcher20 09-27-2013 07:46 AM

Best fajitas i have ever had! Hands down!!!
