Scalloped Potatoes . . . . Suzy Lewis, 1 Jan 02

1) Boil potatoes until tender
2) Grate Cheddar cheese . . set aside - I don't see why "already grated" cheese wouldn't do! I use it!
3) Mix 1/2 pint of sour cream, 1 pint of whipping cream, 1 stick of butter . . . set aside
4) Slice one large onion, thin . . . set aside

In casserole dish place 1/2 onions on the bottom, then 1/2 of the potatoes, then 1/2 of the cheese . .
salt and pepper to taste, then add 1/2 of the sauce
then do the other half
Put potato chips, cumbled, on top and bake till bubbly @350 degrees.

Creamy Cucumbers

2 Tbsp sugar 4 cucumbers, sliced thin
2 Tbsp vinegar 1 medium onion, sliced thin
1/2 tsp salt
1/4 tsp pepper
1/2 cup heavy whipping cream

Dissolve sugar in vinegar & add salt and pepper
Whip cream until almost stiff - add sugar mixture, stir together
Add to cucumbers and onions, stir, let sit for an hour . . .
