Wild pig bacon smoke

Been curing this wild pig belly for the last week. Throwing it on some smoke this morning!

Curious to see how that turns out. Feral hog fat is a different type than domesticated pigs. I've found wild hog fat to be gross and not edible. However, I'd love to have a slice once its done.

First time I've tried this so it's new to me. Like I do with deer when I get a fat one, I cut some off when processing and fried it in a pan. If theres no gamey/foul taste then, I'll keep it in the meat. Tasted good then so we'll see how the bacon turns out! Have about 30 pounds of breakfast sausage form this pig and I added no extra fat.Turned out great!

Ive been told that the fat on a wild one is no good, but it tastes the same to me.

I experimented last year with some First soaked it in a mixture of water apple cider vinger and lemon juice for a week made up some cure rub turned it over every 24 hrs
the longer it cured the better it became
best was 24 days of cureing
