so very simple and makes an awesome appetizer
3 colored peppers
1 pod of garlic
2 tsp anchovy paste (optional)
thin sliced provolone cheese
1/2 cup olive oil
3 roma tomatoes
coarse salt
french baguette bread
dry basil or Italian seasoning
heat whole garlic in 1/3 cup olive oil on low heat until golden brown
remove garlic and set aside
add cleaned julienne peppers and saute' for 5-7 min until soft
add de-seeded chopped tomatoes , saute' until tomatoes have cooked down
add garlic , mash cloves and mix
sprinkle with dry basil or Italian seasonings
while saute'ing , combine the balance of olive oil and anchovy paste (optional yet gives incredible flavor). Stir together and blend, then baste bread rounds with mixture
spoon saute'd pepper mixture onto bread rounds , sprinkle with coarse salt
place cheese on top
bake on 375* for 9 min, serve hot
