Just got my red deer back from the processors and wanted to make some chili. Looked at several recepies but called my daughter Kamden to ask for advice. She is a great cook. You can use any form or ground meat for this dish. It came out great. L M Butler and Arvin Weaver were over here this evening and had a bowl each and Arvin said I needed to post this here. So here it is. It was my idea to use the black beans and corn.
Kamdens Chili.
1 to 1.25 lbs ground meat. I used red deer.
1 large onion, diced
quarter cup chili powder. (Dont be scared)
14 oz can cooked whole tomato pureed
1 cup beef or chicken stock (I used chicken cause thats what we had)
2- 14 oz cans black beans
1- 14 oz can whole kernel corn
1/5 teaspoon cumin
1/5 teaspoon garlic powder
1 and 1/5 teaspoon Tony Chacheries seasoning
1/4 cup red wine
Brown meat and onion in large dutch oven with Chacheries seasoning
Remove meat and onion to another container
Add wine to pan and deglaze over medium heat
Add chili powder and stir and toast for 4 minutes. Dont leave it, keep stiring
Add tomato paste and stir on low heat for 1 minute
Add meat and onion mixture back into pan
Add beef or chicken stock
Salt and pepper to taste
Add cumin to taste
Add garlic powder to taste
Add both cans of black beans with juice
Add whole kernel corn (drained)
Simmer for about 30 to 40 min
Serve with crackers or cornbread
Serves 8 hungry folks or 6 really hungry guys
