Eggplant Pirogue

    Eggplant Pirogue

    Start with 4 large eggplants
    1 lb. of peeled shrimp
    3/4 lb. lump crab meat
    1 bunch green onions
    1 large yellow onion
    1 green bell pepper
    1 red bell pepper
    1/2 cup heavy whipping cream
    2 teaspoons garlic
    cajun seasoning
    bread crumbs
    graded parmesian cheese(optional)
    2 eggs
    milk


    Peel the eggplants then cut into halves(8 halves)

    use a spoon and scoop out center of eggplant halves leaving about 1/3 inch of eggplant

    next mix milk and egg mixture and dip eggplant into this then roll in bread crumbs covering the entire eggplant. Deep fry at 350 until golden brown. Drain on towel and set aside.

    Next melt a teaspoon of butter in a skillet and add diced yellow onion, green and red bellpepper, garlic and green onions. Sautee of medium heat for approx 5 minutes. Next add shrimp and sautee for 2 minutes. Next add crab meat and sautee for 2 minutes. Next add whipping cream and reduce down to a thick texture and season to taste. Next scoop this mixture in the hollowed out eggplant halves. On top of this sprinkle a little bread crumb and graded parmesian then put into broiler for 3 mintes.
