    Cheater Beans

    I make these when I'm in a hurry or forgot to soak my beans.

    1 gal can cooked pinto beans
    2 cans chicken broth
    1 can rotel reg or spicy.
    12 ounce Package bacon
    2 table spoons cumin
    Handful chopped cilantro
    1 med onion chopped fine

    Cut bacon into small pieces and cook in large pan large enough for all ingredients. Add onions after bacon half cooked. Let the onion simmer with the bacon for 3-4 min. Add can of rotel and simmer 5 or so min. Sprinkle 1 table spoon of cumin and simmer for a couple of min. Add the can of beans, chicken broth, 1table spoon cumin, and cilantro. Salt and pepper to taste. Simmer until good and hot.

                        If you want to kick it up a notch add some cooked brisket chopped up with the bacon when it's cooking.

                            You don't need to soak your beans just use a pressure cooker.

                              Very similar to my bean recipe. Try subbing one of the cans of chicken with a can of Modelo Especial, add a heaping teaspoon of minced garlic after the bacon is cooked, and add a heaping teaspoon of brown sugar! Mmmmmmmmm, frijoles borrachos rapidos!!!!
