    Mexican Rice.

    Does any one have a recipe for mexican rice like you would get in a mexican resturaunt like taco cabana? Thanks guys.

    1 skillet with lid @ 10in
    1 cup of long grain white rice
    1 can whole pealed stewed tomatoes
    ½ green bell pepper
    ¼ white onion
    2 cups liquid (1 can chicken broth the rest water)
    Fiesta brand taco seasoning
    Garlic salt
    Regular salt

    In the skillet lightly brown rice in oil (not a lot of oil just enough so it does not stick)
    Then add the onion, pepper, can tomato (juices and all), liquid mixture, and seasonings. This is the part where you take over add taco seasoning, then garlic salt then taste the water and see if you like it if not add more of the seasoning you want it to taste like. Whatever the water tastes like is what your rice will taste like once all the water boils down. Bring to a boil then reduce to low heat and cover. Let simmer till all the water is gone. But b4 all the water has gone lightly stir/fold the rice and test to see if it is cooked or still needs more time. If it is still tacky when you bite it then add more liquid and let simmer again.

    If you want more control of the seasoning then use ground cumin, garlic powder, and garlic salt but the taco seasoning is great for beginners.
