I'm originally from Tulsa and love me some smoked bologna. We just take a whole tube and cut the wrapper off and put some rub on there and into the smoker it goes. We typically don't eat it till the next day/week cut thick and made into bologna sandwiches. That get up the the OP has going looks promising however.
