I make mine pretty simple:
Mayo
Salt & pepper
Garlic Powder
Diced chicken breast
Chopped Parsley
Diced Purple Onion
Chopped Sundried tomatoes (use some of the oil too, it adds a good bit of flavor)
Very thinly sliced celery (paper thin)
I do it by taste, so I don't have measurements
I'll also add in lao gan ma chili crisp to mine for some heat and flavor, but most people don't have that (or know it exists).Last edited by sir shovelhands; 04-19-2018, 07:43 PM.

Recently, my wife did something a bit different in the way she made chicken salad. Difference is in the way you process it. Doubt we’ll go back to old style.
rotisserie/roasted chicken, cooled and pulled.
1/2 Large white onion
4 stalks celery
Helmans mayo, 1 cup (more or less to your taste)
Freeze dried herb blend, Litehouse Salad herb blend (parsley, red onion, chives, shallots, garlic, dill)
Salt / pepper
Pulse chicken in food processor to your liking. We break ours down to medium crumbled consistency. Pour chicken in large bowl. Then process the onion and celery in food processor. Pulse it down fairly well, slightly liquid texture. Pour onion/celery over chicken. Add mayo, salt, pepper, and freeze dried herbs then mix to combine.
Flavors meld better when left to rest overnight in fridge. Attaching photo of herb blend. We found it on end cap of vegetable section at Winco and Sprouts.

pickle relish
green onion
course ground pepper
cajun seasoning
garlic powder
chop the chicken up really fine
I like lots of dukes mayo and pickle relish and use some of the juice
add onion and season to your taste
