Eat the heart from about everything I kill, usually within the day of or several days of. I love heart, especially grilled wrapped inside the caul fat like done on the MeatEater show.

Might be a silly question but I've had deer heart plenty of times, usually grilled hot and fast to medium rare. Would that be OK with a pig heart? Feel like I would want to cook it until it was done DONE.

Yep, it's still pork, so you want it fully cooked.

I love pig heart! One of my favorite dishes. Marinade for a few hours, grill, slice and serve on some torts with something crunchy like a carrot slaw or jicama. Dang good! Best when fresh.

I have had to eat all kinda of heart, tongue, kidney, brains, liver and more. While growing up we ate what was on our plate, or went to bed. Tongue and brains are the only organs I will consider eating now. You can all eat all of them you want but you will never convince me they are “ good”. And I’ve had to eat them fixed about every way possible. I would eat them if I was starving, but never for pleasure.

I like to fillet it out, unrolling it as I cut. Ends up as a couple flat iron looking steaks. Marinade in Worcestershire and brown mustard, season like a steak and cook to med rare on a hot grill.

I would definitely cook wild pork well done. Modern, high quality, farm raised pork is another story.

That's for commercial pork, rare wild piggie is just asking for trich.

Venison heart is one of my favorite meats, I've only had one wild pork heart and it was tasty too, but I was so hungry I dug it out of the gut pile at GRXH so that might have effected the flavor.. lol
