    The Mayor's Tortilla Soup

    1 quart chicken stock
    5 ribs of celery, 1/4" diced
    1 cup red onion, chopped
    1 1/2 cups fresh corn
    1/2 cups carrots, julienned
    3 tablespoons garlic
    1 poblano pepper, 1/4" diced
    2 jalapenos, minced
    1 tbsp salt (calls for 1-1/2, but I cut back...not a salt fan)

    Add all to large, heavy stock pot and bring to a rolling boil.
    Reduce to a simmer for about 30 minutes.

    Add...
    1 1/2 cups grilled (or baked) chicken. *I usually use 3 bone in breast.
    1 1/2 cups cilantro, leaves only
    1/2 cup fresh lime juice

    Return to simmer, then serve with

    fried corn tortilla strips
    shredded pepper jack cheese
    avocado

    might have to try this sometime..looks good..I know I loved the taco soup recipe I found on here.

      Have you actually made this and ate it? Seems it would be awfully hot with all the peppers.

      Who's the Mayor? Mayor Kirk, Leppert or Laura Miller? I'm thinking she might be the only one who wrote a cookbook. just wondering...

          Poblano peppers aren't hot. The recipe actually calls for one jalapeno, but I use two. I still don't feel the heat with two (but then again, I may not be the best at judging hot...I LOVE hot!)

          The fresh lime juice and cilantro at the end is what makes this really good.

            Are you "the Mayor" he is talking about? Or do you have a copy of this cookbook also?

              We are one in the same.

              This is a great recipe..."originated" (I have altered it just a little for personal taste) from the Hudson's on the Bend Cookbook as a Pheasant Tortilla Soup. I have used pheasant, wild turkey and chicken. All have been great. I have made it for many different occasions, and so far everyone has loved it.

                Ok, I think I will call it "Mary's Tortilla Soup" since I would rather think of you on a personal level than on a politically ranked level ! Is that ok?

                            Sounds great. When I put together ladies hunts, we ususally offer to supply our own meals to the outfitter to keep the price down. this would make a great dinner after a cold hunt. Thanks.. copies to my crackberry.
