    We just made some beef sticks and hamburgers from Rams. Both turned out great. It's all,in how you prep the meat. From the kill to the time it's on the plate.

      Looks pretty good, I've had mutton all over the world. The best was in Greece. I'll have to try this one.

        You nailed it, brotha. It's ALL in how you care for it. I've had whitetail that was absolutely inedible because it wasn't well taken care of.

        Aside from good practices with your game in the field (not busting open the bladder, cleanly removing the gut bag, not letting blood soak in and coagulate all over your meat, etc.), I'm a die hard believer in aging my kills in a cooler of ice for 5-7 days.
