    What do you do when your BBQ hits a stall?

    How do you get through a stall?

    I ended up wrapping but I see people say don't

    After 2hrs with no movement of the thermo and hungry people I caved and wrapped

    Pork butt at 240avg temp and stalled at 183 after 11+hr smoke

    Add more fire?
    I usually smoke then wrap to finish off. Throw it in the oven if I'm in a hurry

      Light another fire in another pit or fire pit, use a blower and burn it down to coals, scoop with a shovel and throw it into the pit you are cooking in. I seem to stall out more than I would like and this works for me.

              My briskets always stall around 160 ish IT, just keep it burning and eventually it will pick back up. I don't go by time per pound, just IT, so how ever long it takes.
