Iguana...Its what’s for dinner!

I’ve been working on a project in Trinidad for almost 3 years and I’m being moved to a new project so this is my last week working down here.

One of my guys brought me an iguana to cook. So, tonight, that’s what we’re having.

Going to bbq it since I can’t cook it in a curry.

Ones persons pet is another persons supper. It'll probably taste just like every other reptile. I've eaten snake,turtle and alligator. I couldn't really tell a difference.

Not kidding. There is a directive from the pope that it is ok to eat iguana during Lent. Even though not the Lenten season, dig in without reservation. :-)
