Default Menudo for Christmas Eve

I was telling my wife I wanted something different for Christmas Eve. So Iím making a pot of menudo for Christmas Eve.

I just had some tamales with part of the family. There was also some pico and home made bean dip present. As well as some home grown pickled peppers.

You should have come by.

It’s all in the tripas. If they ain’t right....boy Howdy it can be a nasty mess. Ain’t enough limes or chicharones to make it taste good.

We're having another New Year's Eve party here at the house and after reading this post I told my wife that we need to make a pot of menudo to go with the tamales, arroz, frijoles, tortillas, muŮuelos, empanadas and chocolate along with some adult beverages while playing Toma Todo and Loteria. Yuck, stuff stinks while it's cooking. Just curious, does anyone actually eat the entire contents when eating a bowl of menudo? Reason I ask is every time I see someone eating a bowl of menudo, they just sorta pick around at it and sip some of the broth. They necver seem to be actually chowing down on it like normal food. Always made me wonder why.

LMAO, I'm not gonna totally knock it because I have never actually tried it. I have been in several houses when it was cooking and it stank and turned my stomach. I can't say that I have a burning desire to try it. To each his own. Merry Christmas!

I have sent my wife into culture shock when we married (she is "white"). I grew up eating things she only imagined, Menudo being one.

I use to make it with the tripas right out of the bag. Huge, slimy slithers of guts. Wife did not go for that and gave me a few choice words.

In the last 25 yrs or so I have mastered it. I cut the tripe into small pieces. It is time consuming but worth it. I boil my own chile colorado, strain it, and put a bag of Fiesta Menudo mix. Place with hominey and all the above in a large crock pot.

Btw, honeycomb tripe is the way to go. Looks like that is what the OP used in his.

Yes, tripas must be cut thin. Honeycomb tripas don’t get as slimy either.

I remember when I was a little kid my great grandpa telling us about sumbitch stew. It was basically anything inside a calf that was cooked with taters and hominy.

My wife is white too, and she is still trying to make carne guisada the way my family does.......16 years later. She's gotten pretty good, but not the same.

Lol at some of the responses! My wife also refuses to eat or cook menudo but she does one heck of a job making carne guisada using venison back straps. We're having it for dinner tonight and I'm drooling already.
